Ingredients

  • 1/2 Cup Raisins
  • 1 Egg
  • 3/4 Cup Milk
  • 1 1/2 Cup Bran Cereal
  • 1 Cup Whole Wheat Flour
  • 1 Tsp Baking Soda
  • 1 Tsp Ground Cinnamon
  • 2 Tbsp Melted Butter
  • 1 Apple, cored and shredded
  • 1 Ripe Banana, mashed
  • 1/2 Cup Honey

Directions

  1. Preheat oven to 400* F
  2. Grease 12 muffin cups or line with paper liners
  3. Cover the raisins with water in a microwave safe bowl and microwave on high for 1 minute until raisins are plump
  4. Drain raisins and set aside
  5. Beat the eggs and milk in a bowl, then mix in cereal and let stand until the cereal absorbs the liquid
  6. Mix in raisins, flour, baking soda, cinnamon, butter, apple, banana, and honey and mix well
  7. Spoon the batter into cups and bake for about 20 minutes or until a toothpick can come out clean
