Ingredients

  • 1 cup corn meal
  • 1 cup flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda (or 1 tablespoon of power without buttermilk)
  • 1 egg
  • 1/4 cup oil
  • 1 cup+ of milk (butter or otherwise)

Directions

  1. Preheat Oven to 400°F
  2. Mix the dry ingredients
  3. In a separate bowl, mix the wet ingredients
  4. Combine and stir until completely mixed, the result should look like cake batter
  5. Bake at 400°F for 20 minutes (a double recipe will take 25-30 minutes)
