Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 1/2 cups boiling water
  • 1 1/2 cups sifted flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 tsp vanilla

Directions

  1. Preheat oven to 375°F
  2. Stir boiling water into oatmeal, set aside and let cool
  3. Soft flour, baking soda, and spices
  4. Cream butter and sugar (brown and white)
  5. Add eggs and vanilla, mix well
  6. In alternating steps, add some of the dry mixture and some of the oatmeal. Alternate, finishing with the dry mixture and mix well
  7. Coat an 8x12 inch baking pan with butter and flour
  8. Pour batter into pan and bake for 35-40 minutes or until a cake tester pulls out clean
