Ingredients
- 1 cup corn meal
- 1 cup flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda (or 1 tablespoon of power without buttermilk)
- 1 egg
- 1/4 cup oil
- 1 cup+ of milk (butter or otherwise)
Directions
- Preheat Oven to 400°F
- Mix the dry ingredients
- In a separate bowl, mix the wet ingredients
- Combine and stir until completely mixed, the result should look like cake batter
- Bake at 400°F for 20 minutes (a double recipe will take 25-30 minutes)
